Complement the turkey, do not replace it
Indian-American Thanksgiving in Northern Virginia rarely runs turkey-only. The bird is on the table because the kids expect it and the in-laws fly in for it, but right next to the cranberry sauce there is almost always a tray of chicken dum biryani, a pan of butter chicken, a stack of garlic naan, and a platter of samosas the cousins demolish before the turkey is even carved. Our Thanksgiving catering program is sized to slot into that table — the Indian half of the spread, not a full Indian dinner that competes with what is coming out of your own oven.
