At Pastry Corner Cafe & Lounge in Chantilly, we fry ours fresh to order so the shell stays crackling and the filling stays steaming. We do a classic Veg Samosa with potato-pea, a Chicken Samosa for the meat-eaters, and turn them into a full meal as Samosa Chaat — broken samosas drowned in chickpea chole, tangy tamarind, cilantro-mint chutney, yogurt, and crispy sev. The pastry is light, never greasy; the filling is generously seasoned but never overpowering. Order singles, six-packs, or a catering tray for an event.
