Pani puri — also called gol gappa in the north, puchka in Calcutta, paani patashi in Hyderabad — is the platonic ideal of Indian street food: a hollow crisp puri shell, cracked open with the thumb, stuffed with spiced potato and chickpea, then plunged into chilled mint-coriander-tamarind water and eaten whole, in one bite, before the shell goes soft. Pastry Corner serves ours the way you'd get it from a Mumbai street cart: crisp semolina puris (made fresh, never stored), warm aloo-chana filling, two pani options — Mint (cool, herbaceous) and Sweet Tamarind (tangy, jaggery-sweet) — and as much extra pani as you want.
