Fresh-Baked Indian Puffs — Veg, Chicken, Paneer in Chantilly, VA
An Indian puff is its own genre — flaky laminated pastry shell wrapped around a spiced filling, baked (never fried) until the layers shatter on the first bite and the filling stays piping inside. At Pastry Corner Cafe & Lounge in Chantilly we bake puffs in small batches from open to close so what's on the counter at noon was made that morning, and what's on the counter at 5pm was made that afternoon — no day-old puffs sold at retail prices. The lineup: Veg Puff (masala potato-pea-onion), Chicken Puff (spiced keema with green chili), Paneer Puff (chunks of paneer in tomato-onion masala), Aloo Puff, Egg Puff (Kerala-style boiled egg in masala), and the rotating seasonal special — sometimes mushroom, sometimes Schezwan, sometimes mutton. Halal-friendly chicken and lamb on request. Each puff is a perfect single-serving snack — pair with masala chai, grab on the way out, or order a 24-pack for an office meeting. Vegetarian and meat clearly labeled. Pickup orders are warm; we'll re-crisp them at 350°F if they sit more than 30 min.
