Hakka noodles is the dish that proves Indo-Chinese cuisine isn't a knockoff — it's a full-grown hybrid born from Kolkata's Chinese-Indian community a century ago and now eaten everywhere from Mumbai street carts to Northern Virginia dining rooms. At Pastry Corner Cafe & Lounge, we stir-fry ours over flames hot enough to give the noodles that smoky 'wok hei' edge, tossing with julienned cabbage, bell pepper, carrot, scallion, garlic, ginger, and your choice of protein: vegetable (default), egg, chicken, or shrimp. The sauce is the East-meets-East trio of soy, vinegar, and green chili — savory, tangy, with a low-burn heat that builds. Halal-friendly chicken used on request. Pairs perfectly with our Manchurian (vegetable or chicken) for the classic Indo-Chinese combo.
